What is Blast Chilling and Blast Freezing?
Blast Chilling and Blast Freezing, also known as Shock Freezing, is the rapid chilling of food. This ensures it gets through the danger zone (5-60°C) as quick as possible. Blast Chiller and Freezers achieve this by the targeted blowing of chilled air, at a high velocity, until the core temperature of your food product has reached under 5°C (Blast Chilling) and under -18°C (Blast Freezing).

At around +37°C, the number of bacteria doubles every 20 minutes. Blast Chillers and Blast Freezers cross this range as quickly as possible, taking the core of the temperature of the food to under +3°C in less than 90 minutes, and under -18°C in less than 240 minutes.
