Blast Chilling or Blast Freezing, also known as Shock Freezing, is the rapid chilling of food, to ensure it get’s through the danger zone (5-60°C) as quick as possible.
Blast Chiller/Freezers achieve this by the targeted blowing of chilled air, at a high velocity, until the core temperature of your food product has reached under 5°C (Blast Chilling) & under -18°C (Blast Freezing).
